Tapioca Biriyani/ Kappa Biriyani


A different biriyani with tapioca and chicken. Can either have it as a main dish or snack item. We love it as our Sunday evening snack,though a bit heavy.


Ingredients:
  1. Tapioca- 3/4 kg
  2. Chicken- 1/2 kg, boneless and cut into small pieces
  3. Onion-1,thinly sliced
  4. Grated Coconut- 1 cup
  5. Garlic- 4 pods,sliced
  6. Mustard- 1/2 teaspoon
  7. Red chilly powder- 2 1/2 teaspoon
  8. Coriander powder-1/2 teaspoon
  9. Turmeric powder- A pinch
  10. Fennel powder- 1/2 teaspoon
  11. Salt- 1-2 teaspoon,as required
  12. Curry leaves- 10nos
  13. Oil-2 tablespoon
  14. Water- to boil tapioca
Method:
  1. Marinate the chicken pieces with 1 teaspoon red chilly powder,coriander powder and 1 teaspoon salt,keep aside
  2. Boil the tapioca with a little salt and pinch of turmeric,drain and keep aside
  3. Heat oil in a pan, keeping aside 1 teaspoon oil and fry the marinated chicken pieces,remove from fire.
  4. Meanwhile crush with hands, onions,garlic,grated coconut ,red chilly powder,fennel powder,salt.
  5. Add the cooked tapioca to the pan with chicken pieces along with the crushed onion spice mix.
  6. Mix thoroughly so that masala is spread all over the tapioca.
  7. Heat 1 teaspoon oil in another pan and season mustard seeds and curry leaves,pour them to the tapioca.
  8. Heat covered in low flame for 5 mins
  9. Remove from fire,move onto serving dish.
Serve the tapioca chicken biriyani hot! Serve with pickle if required, I guess there wont be a need for pickles for this mouthwatering dish!. Give a try.

One pot Chicken Biriyani


One pot chicken biriyani or bachelors chicken biriyani is the simplest of all biriyanis! Well it can be called as chicken pulao, suits better than biriyani! 

Ingredients:
  1. Chicken-1/4kg,cut into pieces
  2. Basmati Rice- 1 cup
  3. Onion- 2 large, thinly sliced
  4. Ginger garlic paste- 2 teaspoon
  5. Red chilly powder- 1 1/2 teaspoon
  6. Turmeric powder- 1/2 teaspoon
  7. Pepper powder- 1/2 teaspoon
  8. Coriander powder- 1/2 teaspoon
  9. Salt- 2 teaspoon, as required
  10. Bay leaves- 2-4
  11. Cardamom pods- 2
  12. Cloves-2
  13. Cinnamon stick- 2 inch piece
  14. Pepper,whole-2-4
  15. Cumin seeds- 1/4 teaspoon
  16. Ghee-1/4 cup
  17. Raisins,cashew- for garnishing
  18. Water- 1 1/2 cups
Method:
  1. Wash drain and keep rice aside.
  2. Heat half of the ghee in a pan. 
  3. Add ingredients 9-13 and saute till aroma fills in air.
  4. Add ginger garlic paste and saute till raw smell fades away
  5. Keep 1/2 onion aside and add remaining to the pan with spices and saute till golden brown.
  6. When they are done, keep them to a side in pan and lower the heat.
  7. Pour in the ingredients 4-7 and heat them.
  8. Mix the spice and onion well.
  9. Pour in remaining ghee and add the chicken pieces, and fry them till they become firm.
  10. Add the drained rice, and mix well.
  11. Add water,salt and mix well.Check for salt,spice requirements and add more if required.
  12. Cover and cook in low flame till rice is done. 
  13. There may be some water at the bottom, open the lid and move gently with a fork to let the water escape and evaporate.
  14. Fry remaining onion, cashews,raisins in ghee and garnish!
Serve hot with cucumber onion raita. Simple dinner/lunch is ready to be served. Happy cooking,happy eating.

Chicken Biriyani


Chicken Biriyani... A spicy rice variety made on multiple occasions. Whenever I feel like make something special, I think a lot and finally end up with Chicken biriyani. The fried chicken pieces with spice flavours add more taste to the dish.
The cooking is not difficult, but for starters, it may appear time consuming, but after cooking a couple of times, you will learn the time management for the same!

Serves- 6

Ingredients:
  1. Chicken- 1 kg
  2. Basmati rice-3 cups
  3. Onion-2 large
  4. Tomato- 1 
  5. Egg- 3
  6. Garlic- 10 pods
  7. Ginger- 2 inch long piece
  8. Green chillies- 4
  9. Cinnamon stick -4 pieces
  10. Cardamom pods - 4
  11. Star anise- 3
  12. Cloves-4
  13. Fennel seeds- 1 teaspoon
  14. Bay leaves-4
  15. Curry leaves- 10
  16. Salt-1 teaspoon
  17. Biriyani masala- 1 teaspoon
  18. Ghee- 1/4 cup
  19. Water- 6 cups
  20. Rose essence- 2 teaspoon

Ingredients for marination:
  1. Red chilly powder - 2 tablespoon
  2. Turmeric powder- 1 teaspoon
  3. Pepper Powder- 4 teaspoon
  4. Corriander Powder - 1 tablespoon
  5. Salt-1 1/2 teaspoon
  6. Curd- 1 tablespoon
  7. Lime juice-2 teaspoon
Method:
  1. Cut the chicken into medium pieces and pierce the flesh with a fork.
  2. Make a paste of the marinade and marinate the chicken pieces overnight(minimum 4 hours)
  3. Wash and drain the rice.
  4. Shallow fry them in 2 tablespoon ghee, keep aside
  5. Heat 1 tablespoon ghee and fry cloves,cardamom,cinnamon,star anise,fennel seeds,bay leaves till they crackle.
  6. To the same pan add the thinly sliced onions and fry them till golden brown.
  7. Add the rice along with salt,water to the above and cook covered till rice is cooked.
  8. Remove from fire, gently separate the rice with fork.
  9. Boil the eggs, remove the shell, cut into half,keep aside.
  10. Grind the garlic, ginger,green chillies to a very fine paste
  11. Mean while shallow fry the chicken pieces in 1 tablespoon ghee and keep aside.
  12. To the same pan add 1 full onion sliced, along with biriyani masala,salt and fry till golden brown.
  13. Add tomatoes, grind paste,curry leaves, cover and cook for 2 mins.
  14. Add the fried chicken pieces, cover and cook in medium flame till the gravy becomes thick and dry.
  15. Remove from fire and keep aside.
  16. Next heat 1 teaspoon ghee in a pan, add a layer of chicken with masala.
  17. Cover this with a layer of cooked rice, sprinkle rose essence.
  18. Continue the same with the remaining chicken and rice.
  19. Cover and cook in low flame for 5 mins.
  20. Heat 1 tablespoon ghee and fry 1 onion thinly sliced into dark brown and keep aside.
  21. To the same pan add raisins and cashews and toss them.
  22. Move the rice to a serving dish and garnish with fried onions,eggs, raisins and cashews.
Yummy mouth watering chicken biriyani is ready! All chicken lovers are gonna love this dish. Serve with Raita , pudina chutney .

Pudina Chutney


A well known side dish for rice varieties like Ghee rice, Biriyani.

Ingredients:
  1. Pudina leaves- A handful
  2. Curry leaves- A handful
  3. Salt-1 teaspoon
  4. Green chillies-3 nos.
  5. Grated coconut- 1/2 cup
  6. Ginger- 1/2 inch piece, cut finely
  7. Onion- 1/4 cut finely
  8. Water- 1/3 cup
Method:
  1. Mix ingredients well with enough water
  2. Grind to a fine paste in a mixer.

Pudina chutney is ready! Serve with hot biriyanis along with raita to enjoy multiple flavours.

Raita/Salad


Raita!!! a very simple side dish. Can have it any time, any season. Its simply refreshing and healthy!

Ingredients:
  1. Tomato- 1 big ripe (thinly sliced)
  2. Onion- 1 large (thinly sliced)
  3. Green chillies- 2 nos (cut finely)
  4. Salt- 1 teaspoon
  5. Thick Curd- 1 cup
  6. Water- 1/2 cup

Method:
  1. Mix the cut onions, tomatoes and green chillies
  2. Add salt
  3. Mix thoroughly the veggies and salt with hand(to crush the veggies)
  4. Add curd and mix evenly
  5. Add water and mix thoroughly

Simple and delicious raita is ready. All age groups love this dish equally. Can be served with rice, biriyanis, rotis ,also can be eaten alone
