<br />
<b>Ingredients:</b><br />
<ol style="text-align: left;"><li>Dried fish- 1/2 cup</li>
<li>Coconut,grated- 1/2 cup</li>
<li>Dried Red chillies-3</li>
<li>Onion- 1/4, sliced</li>
<li>Salt- 1 teaspoon(Only if fish is unsalted)</li>
<li>Curry leaves- 5-6</li>
<li>Oil- to fry fishes </li>
</ol><b></b><br />
<b>Method:</b><br />
<ol style="text-align: left;"><li>Clean with water very well, the dry fish to remove any extra salt,if unsalted clean just once.</li>
<li>Heat oil in a pan and fry the dry fishes till crispy, remove from fire and allow to cool</li>
<li>Grind together fish,coconut,onion,dried red chilly,curry leaves, salt(if unsalted fish is used) to a fine paste(add small quantity of water if required to accelerate grinding)</li>
<li>Serve with rice gruel/dosa</li>

Actually I wanted to make a dark colored tempting chicken dish, but daydreaming mademe forget to roast ingredients before grinding and hence resulted in this, but we simply loved it. The thick gravy made it a lovely combo with rice, guess it would be equally gud with rotis too, n may b dosas!<br />
<br />
<strong>Ingredients:</strong><br />
<ol style="text-align: left;"><li>Chicken - 1/4 kg</li>
<li>Onion- 1 , thinly sliced</li>
<li>Tomato- 1 small, chopped</li>
<li>Curry leaves- 8-10</li>
<li>Mustard seeds-1/2 teaspoon</li>
<li>Grated coconut- 1/2 cup</li>
<li>Coriander powder-3 teaspoon</li>
<li>Fennel seeds- a pinch</li>
<li>Cumin seeds- a pinch</li>
<li>Cardamom- 1 pod</li>
<li>Cinnamon stick- 1 inch stick</li>
<li>Dried red chillies-5</li>
<li>Turmeric powder- 1/2 teaspoon</li>
<li>Salt- 1-2 teaspoon, as required</li>
<li>Oil-1 1/2 tablespoon</li>
<li>Water</li>
</ol><strong>Method:</strong><br />
<ol style="text-align: left;"><li>Grind together 1/2 the sliced onions, ingredients 6-12 together to a thick paste(use little water if required)</li>
<li>Heat oil in a pan and splutter mustard seeds.</li>
<li>Add the onions and saute till soft</li>
<li>Add the tomatoes, curry leaves and saute for a hwile</li>
<li>Add the chicken pieces,salt and turmeric ,mix well</li>
<li>Add the ground paste along with 1/2 cup water and mix well</li>
<li>Cover and cook in low flame for 10 min or till chicken is cooked.</li>
<li>Check for the salt and spice requirements.</li>
<li>Cook in high flame for another 5-6 mins till the gravy becomes thick.</li>
<li>Remove from fire and serve hot</li>

<li>Meanwhile coarse grind the grated coconut.</li>
<li>Add the grated coconut to the cooked spinach, mix well</li>
<li>Break in the eggs and mix well, so that egg is spread all over.</li>
<li>Test for the salt requirements and add more if required.</li>
<li>Sprinkle pepper powder and remove from fire</li>
<li>Serve hot.</li>

<li>Milk- 1/4 cup</li>
<li>Grated coconut- 1 tablespoon</li>
<li>Red chilly powder- 2 teaspoon</li>
<li>Turmeric powder-1/4 teaspoon</li>
<li>Coriander powder-1/2 teaspoon</li>
<li>Pepper powder- 1/2 teaspoon</li>
<li>Salt- 1-2 teaspoon,as required</li>
<li>Curry leaves- 10-12</li>
<li>Oil- 1 1/2 tablespoon </li>
</ol><b>Method:</b><br />
<br />
<ol style="text-align: left;"><li>Boil the vegetables with little salt and keep aside.</li>
<li>Heat oil in a pan and saute the paneer cubes till light brown, remove from fire.</li>
<li>Boil the tomato to remove the skin and mash them and set aside.</li>
<li>To the same pan add the onions, saute them till soft.</li>
<li>Add the mashed tomatoes,green chillies cooked veggies along with turmeric powder,red chilly powder,coriander powder,pepper powder,salt and mix well.</li>
<li>Cover and cook for 5 mins in low flame.</li>
<li>Meanwhile grind the coconut to a very fine paste.</li>
<li>Add the ground coconut, milk,fried paneer cubes to the pan and milk well.</li>
<li>Throw in the curry leaves. </li>
<li>Heat in low flame for another 10 mins.</li>
<li>Check for the spice requirements and remove from fire.</li>
</ol>Serve hot with rotis/chapathis! <li>Sour curd- 1/2 cup</li>
<li>Curry leaves- 10</li>
<li>Coconut oil- 2 teaspoon</li>
<li>Red chilly powder- 1 teaspoon</li>
<li>Turmeric powder- 1/2 teaspoon</li>
<li>Cumin seeds- 1/2 teaspoon</li>
<li>Salt- 1-2 teaspoon,as required</li>
</ol><b>Method:</b><br />
<ol style="text-align: left;"><li>Steam and cook the vegetables along with red chilly powder, turmeric powder, salt,green chillies(don’t over cook)</li>
<li>Drain the excess water and keep the cooked veggies aside.</li>

<li>Add the ground mix to the cooked veggies.</li>
<li>Add curry leaves mix well, and cook in low flame for 5 mins.</li>

<ol style="text-align: left;"><li>Peel the skin of the kakkiri and cut them into very small pieces(You can use it with skin too).</li>
<li>Grind together, curd,coconut,1 teaspoon mustard seeds,salt, green chillies to a fine paste.</li>
<li>Mix the ground ingredients with the cut kakkiri.</li>
<li>Heat oil in a pan and splutter mustard seeds, and add curry leaves, red chillies. </li>
<li>Season with the kakkiri curd mix.</li>

<li>Fenugreek seeds- 1/4 teaspoon</li>
<li>Dried red chilly- 2</li>
<li>Curry leaves- 10</li>

</ol><b>Method:</b><br />
<ol style="text-align: left;"><li>Cook the cut kumbalanga, with green chillies,turmeric and 1 teaspoon salt till tender,keep aside.</li>
<li>Grind together grated coconut,cumin seeds, with a little water to a very fine paste</li>
<li>Add the ground paste,red chilly powder to the cooked veggie and mix well</li>
<li>Add the sour curd along with 1/2 cup water and mix well.</li>
<li>Heat in low flame for 3-4 mins.</li>
<li>Heat oil in a pan,splutter mustard seeds,add fenugreek seeds,curry leaves, dried red chillies.</li>
<li>Pour over the curd veggie mix and mix well.</li>
<li>Check for salt and spice requirements and add more if required</li>
<li>Serve hot with rice.</li>
</ol>If the curd is not much sour, adding a little tamarind juice would help increase the sourness. <li>Add the thinly sliced onions and saute till soft.</li>

<li>Chicken breasts- 1/4 kg, cut into 1/4 inch width strips</li>
<li>Onion- 1 large, very thinly chopped</li>
<li>Tomato- 1 large, thinly chopped</li>
<li>Capsicum- 2 large, thinly striped</li>
<li>Bay leaves- 2</li>
<li>Salt- 1 -2 teaspoon</li>
<li>Sugar- 1 teaspoon</li>
<li>Pepper powder- 1 1/2 teaspoon</li>
<li>Red Chilly powder- 1 teaspoon </li>
<li>Cornstarch- 2 teaspoon</li>
<li>Soya sauce- 2 teaspoon</li>
<li>Water- 1/2 cup</li>
<li>Oil- 2 tablespoons </li>
</ol><div style="text-align: left;"><b>Method:</b></div><ol style="text-align: left;"><li>Marinate the chicken strips with 1 teaspoon pepper powder and 1/2 teaspoon salt and keep aside while cutting veggies.</li>
<li>Meanwhile cook the spagetti as per packet instructions and keep aside. </li>
<li>Heat oil in a pan and fry the chicken strips in medium heat till the pink colour disappears,remove and keep aside.</li>
<li>To the same pan and the very finely chopped onions and saute till soft.</li>
<li>Add the fried strips to pan, along with remaining ingredients except capsicum, cornstarch, soy sauce and water. </li>
<li>Add capsicum, cover and cook for 10 minutes.</li>

<li>Dry fish- 3/4 cup</li>
<li>Onion-1,thinly sliced</li>
<li>Grated Coconut- 1 cup</li>
<li>Garlic- 4 pods,sliced</li>
<li>Mustard- 1/2 teaspoon</li>
<li>Red chilly powder- 2 1/2 teaspoon</li>
<li>Coriander powder-1/2 teaspoon</li>
<li>Turmeric powder- A pinch </li>
<li>Salt- 1-2 teaspoon,as required</li>
<li>Curry leaves- 10nos</li>
<li>Oil-2 tablespoon</li>
<li>Water- to boil tapioca</li>
</ol><b>Method:</b><br />
<ol style="text-align: left;"><li>Rinse well the dry fishes to remove any excess salt(rinse just once if unsalted)</li>
<li>Boil the tapioca with a little salt and pinch of turmeric,drain and keep aside</li>
<li>Heat oil in a pan, keeping aside 1 teaspoon oil and fry the rinsed dry fishes with little turmeric (and salt if unsalted) till crispy,remove from fire.</li>
<li>Meanwhile crush with hands, onions,garlic,grated coconut ,red chilly powder,salt.</li>
<li>Add the cooked tapioca to the pan with fishes along with the crushed onion spice mix.</li>
<li>Mix thoroughly so that masala is spread all over the tapioca.</li>
<li>Heat 1 teaspoon oil in another pan and season mustard seeds and curry leaves,pour them to the tapioca.</li>
<li>Heat covered in low flame for 5 mins</li>
<li>Remove from fire,move onto serving dish.</li>

<ol style="text-align: left;"><li>Wash the dried fish well with water 2-3 times, to remove any extra salt present and drain( I used unsalted ones and hence omitted this step).</li>
<li>Heat oil in a pan and fry the dry fishes remove and keep aside(If using unsalted ones, add 1/2 teaspoon salt while frying)</li>
<li>To the same pan, add onion(Keep 1 teaspoon of onions, cubed aside), garlic and saute till soft. </li>
<li>Add the green chillies, tomatoes and saute </li>
<li>Add the red chilly powder,turmeric powder,salt,cover and cook for 5 mins. </li>
<li>Meanwhile Grind the grated coconut with little water to a very fine paste. </li>
<li>Add the ground paste along with turmeric paste to the boiling onion base,stir well. </li>
<li>Add the fried dry fishes and mix well.Add water if required </li>
<li>Throw in the curry leaves. </li>
<li>Cook covered in low flame for 10 mins. </li>
<li>Check for the salt requirements and add more if required. </li>
<li>Saute the cubed onions till dark brown</li>
<li>Add them to the curry and mix well.</li>
<li>Remove from fire and move onto a serving bowl. </li>
</ol>Serve hot with rice. <li>Onion- 1 small, cut into very part and 1 cut into wedges</li>

<li>Garlic- 4 pods,thinly sliced</li>
<li>Pepper powder- 1 teaspoon</li>

<li>Turmeric powder- a pinch</li>
<li>Sal- 1-2 teaspoon</li>
<li>Tomato sauce- 1-2 tablespoon</li>
<li>Oil- for frying chicken</li>

<ol style="text-align: left;"><li>Clean the chicken lollipop and make small slits in them with a fork.</li>
<li>Marinate them with the red chilly powder,turmeric and little salt,keep aside for 20 mins.</li>
<li>Heat oil in a deep pan and fry the chicken pieces till golden brown,keep aside.</li>
<li>In a pan take 1 tablespoon oil(use the oil used for frying chicken) and saute thinly chopped onions.</li>
<li>When onions become soft add te garlic and curry leaves, saute well till raw smell fades away.</li>
<li>Add the chopped tomatoes and saute till they are very soft and gets mixed with onion base.</li>
<li>Add the diced onions, capsicum and saute for 1-2 minutes.</li>
<li>Add the tomato sauce,red chilly flakes, pepper powder and mix well.</li>
<li>To the above base add the fried chicken pieces,mix well so as to spread the base over chicken.</li>
<li>Check for salt and add if required</li>
<li>Remove from fire and serve!.</li>

Sweet and tasty evening snack made of jaggery and rice flour. Usually back home we make it in plaintain leaves, and call it Ila ada, since I dont get plaintain leaves here , I have started making adas with Aluminium foil! It comes out as perfect as the one with plantain leaves, but lacks the flavour ans special taste, best ones would come from plaintain ones.<br />
<br />
<b>Ingredients:</b><br />
<ol style="text-align: left;"><li>Rice flour- 2 cup</li>
<li>Grated Jaggery- 3/4 cup</li>
<li>Coconut,grated- 1/2 cup</li>
<li>Salt-1/2 teaspoon</li>
<li>Warm water-2 1/4 cups</li>
<li>Plantain eaves/ Foil </li>
</ol><br />
<b>Method:</b><br />
<ol style="text-align: left;"><li>Roast the rice flour for a min and make a fine dough adding 2cups of water,salt, keep aside.</li>
<li>Rub together coconut,grated jaggery with 1/4 cup water.</li>
<li>Make lemon size balls out of the rice flour dough and place them on the foil/leaf.</li>
<li>Spread them by pressing down with fingers.</li>
<li>Spread a spoon of jaggery coconut mixture onto them.</li>
<li>Fold them and cook in steam.</li>
<li>Repeat the same with remaining flour.</li>
<li>Remove from fire, remove the leaves/foil, cut them and serve.</li>
</ol>Very sweet ada is ready to be served. If you over sugar , then add sugar instead of jaggery. Adding a small quantity of ghee to the rice flour also adds more flavour to the dish. <ol style="text-align: left;"><li>Tapioca- 3/4 kg</li>
<li>Chicken- 1/2 kg, boneless and cut into small pieces</li>
<li>Onion-1,thinly sliced</li>
<li>Grated Coconut- 1 cup</li>
<li>Garlic- 4 pods,sliced</li>
<li>Mustard- 1/2 teaspoon</li>
<li>Red chilly powder- 2 1/2 teaspoon</li>
<li>Coriander powder-1/2 teaspoon</li>
<li>Turmeric powder- A pinch </li>
<li>Fennel powder- 1/2 teaspoon </li>
<li>Salt- 1-2 teaspoon,as required</li>
<li>Curry leaves- 10nos</li>
<li>Oil-2 tablespoon</li>
<li>Water- to boil tapioca</li>
</ol><b>Method:</b><br />
<ol style="text-align: left;"><li>Marinate the chicken pieces with 1 teaspoon red chilly powder,coriander powder and 1 teaspoon salt,keep aside</li>
<li>Boil the tapioca with a little salt and pinch of turmeric,drain and keep aside</li>
<li>Heat oil in a pan, keeping aside 1 teaspoon oil and fry the marinated chicken pieces,remove from fire.</li>
<li>Meanwhile crush with hands, onions,garlic,grated coconut ,red chilly powder,fennel powder,salt.</li>
<li>Add the cooked tapioca to the pan with chicken pieces along with the crushed onion spice mix.</li>
<li>Mix thoroughly so that masala is spread all over the tapioca.</li>
<li>Heat 1 teaspoon oil in another pan and season mustard seeds and curry leaves,pour them to the tapioca.</li>
<li>Heat covered in low flame for 5 mins</li>
<li>Remove from fire,move onto serving dish.</li>
</ol>Serve the tapioca chicken biriyani hot! Serve with pickle if required, I guess there wont be a need for pickles for this mouthwatering dish!. Spicy,juicy squid roast prepared in traditional Kerala method. Kids would love it,as its bones free! try it out if you haven’t ever tried out any squid recipes!<br />

<b>Ingredients:</b><br />
<ol style="text-align: left;"><li>Squid- 1/4 kg</li>
<li>Tomato-1 large,thinly sliced</li>
<li>Onion-1 large,very thinly sliced</li>
<li>Green chillies- 3,slit</li>
<li>Garlic- 4 pods,thinly sliced</li>
<li>Ginger- 1 inch piece, thinly chopped</li>
<li>Curry leaves- 10</li>
<li>Red Chilly powder- 2 teaspoon</li>
<li>Pepper powder-1 teaspoon</li>
<li>Coriander powder-1 teaspoon</li>
<li>Turmeric powder-1/2 teaspoon</li>
<li>Salt- 1-2 teaspoon,as required</li>
<li>Coconut milk- 1/2 cup </li>
<li>Oil-1 tablespoon</li>
<li>Water- 1/2 cup </li>
</ol><b>Method:</b><br />
<ol style="text-align: left;"><li>Clean the squid well, removing all those ink-jets,inks and light skins,if any .</li>
<li>Marinate with 1 teaspoon each of red chilly powder,1/4 teaspoon turmeric powder,1/2 teaspoon salt and keep aside while cutting vegetables.</li>
<li>Heat oil in a pan saute onions,ginger an garlic.</li>
<li>When they turn slight brown ,add tomatoes, green chillies, and all the remaining spice,salt and mix well</li>
<li>Cook covered for 5 mins.</li>
<li>Add the marinated squid pieces and mix well</li>
<li>Transfer all the ingredients to a pressure cooker and pressure cook with 1/2 cup water for 2-3 whistles</li>
<li>Transfer the cooked gravy to the previous pan,throw in curry leaves and coconut milk and cook them in high flame till the water content gets dried up.</li>
<li>Remove from fire when the gravy becomes thick.</li>
</ol>Serve hot as a side dish with rice! A very tasty combination of kappa/tapioca and beef. A very much loved dish in southern Kerala. Have it as a snack/lunch/dinner/breakfast/or brunch! It suits all time!<br />

<ol><li>Marinate the cleaned beef with the marinating ingredients for 20-30 mins.</li>
<li>Cook the tapioca pieces with 1/2 teaspoon salt and turmeric,and keep aside.</li>
<li>Pressure cook the beef in the same water remaining(if any or add more water)</li>
<li>Meanwhile dry roast the ingredients and grind them to a very smooth paste with minimum water.</li>
<li>Take the cooked beef,tapioca in a wide pan,mix well</li>
<li>Add the ground paste and stir well. </li>
<li>Cook on very low flame for 5 mins ,assuring the ground paste is spread all over the beef and tapioca.</li>
<li>Remove from fire,move to a serving dish and serve hot!</li>
</ol>Take care not to overcook the tapioca,but if you love it that way, proceed! Adjust the salt and spice requirements according to desire. <li>Onion- 1 small, thinly sliced</li>
<li>Broccoli- 1 floret, thinly sliced</li>
<li>Dried red chillies- 3</li>
<li>Salt- 1-2 teaspoon</li>
<li>Pepper- 2 teaspoon</li>
<li>Turmeric powder- a pinch</li>
<li>Curry leaves-5-10 </li>
<li>Water- 1/2 cup</li>
<li>Oil- 1 tablespoon</li>

<b>Method:</b><br />
<ol style="text-align: left;"><li>Marinate the chicken pieces with turmeric powder and 1 teaspoon each of salt and pepper.</li>
<li>Meanwhile cut the vegetables.</li>
<li>Crush with hands the red chillies and onions.</li>
<li>Heat oil in a pan and saute onion,red chillies</li>
<li>When they turn soft, add the chicken pieces and saute till they turn slight brown on all sides.</li>
<li>Add the sliced broccoli and and the remaning spices,curryleaves and saute.</li>
<li>Add water,cover and cook in low flame for 5-10 mins.</li>
<li>Cook in high heat till the water is lost and the masala becomes thick.</li>
<li>Serve hot!</li>
