Healthy vegetarian side dish, but if you are a weight watcher, beware of paneer!

- Paneer,cubed-1 cup
- Onion-1 large,sliced
- Tomato- 1 medium,sliced
- Capsicum- 1,cubed
- Garlic- 2 pods,crushed
- Ginger- 1 inch,crushed
- Red chilly powder- 1 teaspoon
- Turmeric powder- a pinch
- Coriander powder- 1 teaspoon
- Salt-1 1/2 teaspoon or as required
- Oil- 1 tablespoon
- Water- 1/2 cup
- Coriander leaves for garnishing
- Heat oil in a pan and shallow fry the paneer cubes
- Drain and keep aside
- To the same pan, add chilly powder,turmeric powder,coriander powder and heat for a min.
- To this add crushed garlic and ginger, saute till raw smell goes
- Add chopped onions and saute till they turn light
- Add tomatoes, cover and cook till tender.
- Allow them to cool for a while.
- Coarse grind them in a mixer with 1/2 cup water and keep aside
- To the former pan add cubed capsicum and saute for a while.
- Add the ground paste,salt and mix well.
- Test for the spice requirements
- Add the fried paneer cubes, cover and cook till gravy thickens.
- Garnish with coriander leaves
